Jean-Louis Peste practiced medicine at the Hospices de Beaune in the middle of the 19th century, for more than 30 years. His daughter, Baronesse de Baÿ, bequeathed a vast estate to the Hôtel-Dieu in 1924, in memory of her father. This cuvée comes from 89% of very old vines, or vines planted before 1985, and is made up of 52% of the plots of Chaumes and Voierosses facing south/south-west. Their vines were planted in 4 times, between 1976 and 1985. The plots of Les Bressandes, whose oldest vines date from 1940, and Les Grèves, bring the final balance to this cuvée.
